Gochujang chili!

A friend of mine recommended to add gochujang paste to chili and I tried that yesterday. It was SO good! It really brings out the umami and adds a tiny bit of sweetness. I added 1 Tablespoon to this whole pot. 
I used Impossible meat, diced tomatoes and tomato paste. Plus ancho, cayenne, New Mexico chili powder and Flatiron Pepper Hatch Valley Green pepper flakes.

Silk Road Cooking: Indian curry

 I cooked from one the most beautiful books in my collection called Silk Road Cooking: A Vegetarian Journey. I made the Indian Cauliflower and Potato Curry but substituted broccoli and kale for the cauliflower since I didn’t have any. It was very easy to make and turned out delicious! The Thai chili in it was πŸ‘ŒπŸ½. I used a Thai chili from my garden.

Musalwa’a.



 I made this delicious Palestinian lentils and rice dish called Musalwa’a. I used a recipe by @lahbco that he posted earlier today. So good. Very comforting and amazing topped with caramelized sumac onions and Aleppo pepper. Snacks

 Dips for snacks. Zucchini tahini dip (basically Moutabal recipe substituting zucchini for the eggplant πŸ‘ŒπŸ½), Shakshuka no egg, and smashed kidney beans topped with olive oil, lime and homemade shatta (hot chili sauce). #dips #bread #vegan #shakshuka #beans #zucchini #shatta

Palestinian roasted cauliflower soup and Syrian bulgur relish.

A beautiful book with stories and recipes. I think this is going to become a favorite.

I topped the roasted cauliflower soup with pieces of roasted cauliflower and cooked chunks of vegan sausage.

Making Syrian bulgur relish from the book Olive Trees and Honey. The sauce is a delicious combination of pomegranate, molasses, lemon juice, crushed walnuts, olive oil, cumin and tomato paste.

Tossed with the reconstituted bulgur wheat.

Served with a mixed green salad with tahini and balsamic glaze. And bread.

Mushroom and Jackfruit Stew

 Mushroom and Jackfruit Stew on top of mashed potato. This was so delicious! It also has in it: thinly sliced onions, celery, carrots, garlic, mixed herbs, flour, paprika, smoked paprika, cloves, miso paste, tomato paste, mushroom broth, soy sauce, salsa inglesa (vegan substitute for Worcestershire sauce), apple cider vinegar, sugar, salt, pepper, @bistogravyuk granules.
